Roasted Cauliflower With Goat Cheese And Lemon

Ingredients:

  • 1 large head cauliflower
  • 1 Tablespoon plus 1 teaspoon olive oil
  • Course salt
  • Ground pepper
  • 1 Tablespoon fresh parsley
  • 1 Tablespoon fresh goat cheese
  • 1 teaspoon fresh lemon juice

Directions:

Step 1.

Preheat oven to 425 degrees.

Step 2.

In a medium bowl, toss 1 large head cauliflower (about 2 1/2 pounds), cut into florets, with 1 tablespoon plus 1 teaspoon extra-virgin olive oil. Season with salt and pepper.

Step 3.

Arrange in a single layer on a rimmed baking sheet and roast until tender and browned in spots, 15 minutes.

Step 4.

Let cool 5 minutes.

Step 5.

Return to bowl; add chopped parsley, crumbled goat cheese, 1 teaspoon oil, and lemon juice.

Step 6.

Toss to combine and season with salt and pepper.

Step 7.

Serve warm or at room temperature.
